Easy Strawberry Pie

Cook this Easy Strawberry Pie with a cookie and butter crust. If you like your desserts very sweet, mix in a little powdered sugar with the strawberry filling. No oven needed.

1 tablespoon lemon zest, For the crust
1 tablespoon raw sugar, For the crust
1/2 cups butter, Melted, for the crust
1 envelope Zuko® Strawberry, 15 g
1/2 cups whipping cream
2 cups cream cheese
1 tablespoon lemon juice
1 tablespoon vanilla essence
1 envelope unflavored gelatin powder, 7g hydrated and melted
whipped cream, to decorate
strawberries, halved, for a garnish

For the crust, using a food processor, finely grind the wafers with the corn flakes to a powder. You can also use a plastic bag and a rolling pin.
In a bowl, mix the ground cookies and cereal with the lime zest, brown sugar and butter.
Pour into a pie or tart mold and using a spoon, press lightly to form the crust. Refrigerate until set.
For the filling, mix the Zuko® strawberry with the whipping cream. Set aside.
Using a mixer, soften the cream cheese and add in the whipping cream, lime juice, vanilla and pour in the unflavored gelatin slowly in a stream.
Pour into the prepared cookie crust and spread to even out. Refrigerate until set. Unmold and decorate with whipped cream and strawberries.
