Eggnog Pudding

  • 1 cup cow's milk
  • 1/2 cups sugar
  • 3 eggs
  • 2 teaspoons brandy
  • 1 teaspoon vanilla essence
  • 1 pinch nutmeg
  • 1 cup whipping cream, cold

  • In a pot, mix milk and ¼ cup of sugar. Cook over medium heat stirring constantly until mixture simmers. Remove from heat immediately.
  • In a bowl, whisk eggs and remaining sugar. Once thoroughly mixed, add milk and cook over medium heat whisking constantly until a thick pudding is obtained. Set aside.
  • Strain pudding with a fine-mesh sieve. Add brandy, vanilla, and nutmeg. Mix thoroughly.
  • Place bowl into a larger one with ice cubes and let rest for 10 minutes or until pudding cools. Stir occasionally.
  • Meanwhile, whip whipping cream to soft peaks. Fold one-third of the pudding into the whipping cream with a silicone spatula.
  • Serve eggnog pudding in cups and let set in the fridge.
