Eggnog Custard

  • 1 cup cow's milk
  • 1/2 cups sugar
  • 3 eggs
  • 2 teaspoons brandy
  • 1 teaspoon vanilla essence
  • 1 pinch nutmeg
  • 1 cup whipping cream, fry

  • In a pot, mix the milk with 1/4 cup of sugar, cook while stirring over medium heat until it comes to a boil, then remove it immediately from the stove.
  • In a bowl, beat the yolks with the remaining sugar, and when well combined, add the milk and cook while continuously stirring over medium heat until it thickens and has a custard-like texture; remove.
  • Strain it through a fine mesh sieve, add the brandy, vanilla, and nutmeg; stir to combine.
  • Place the bowl in a larger one filled with ice cubes and let it sit for 10 minutes or until the custard cools; stir occasionally.
  • Meanwhile, whip the cream, and when soft peaks form upon lifting the beaters, fold one-third into the custard using a gentle motion (use a rubber spatula).
  • Pour the custard into glasses and refrigerate until set.
