Ingredients

8 portions
  • 1 cup milk
  • 1/2 cups sugar
  • 3 eggs
  • 2 teaspoons brandy
  • 1 teaspoon vanilla essence
  • 1 pinch nutmeg
  • 1 cup whipping cream, cool

Preparation

In a saucepan mix the milk with 1/4 cup of sugar, cook while stirring and at medium heat until it boils, remove immediately from the stove.
In a bowl beat the yolks with the remaining sugar and when they are integrated, add the milk and cook while stirring, over medium heat, until it thickens and has a custard texture; remove.
Strain it through a fine mesh strainer, incorporating brandy, vanilla and nutmeg; Stir to integrate them.
Place the bowl in a larger one with cubes of ice and let stand 10 minutes or until the custard cools; move from time to time
Meanwhile, beat the cream and when you lift the blades form soft peaks, add a third part to the custard with wrapping movement (use a rubber spatula).
Empty the custard in glasses and refrigerate until set.

PRESENTATION

Decorate your taste (with curls or chocolate syrup, cherries, etc.).
