Flambéed Banana Crepes

Flambéed banana crepes are a typical preparation from a restaurant with table service (cooked right there), it is a delicious, elegant dessert, but also very easy to make at home. Ideal for enjoying on a special occasion, with easily obtainable ingredients. Enjoy with Negra Modelo® Beer.

  • 2 cups flour, for the crepes
  • 4 eggs, for the crepes
  • 4 tablespoons butter, melted, for the crepes
  • 1/4 cups sugar, for the crepes
  • 1 tablespoon vanilla essence, for the crepes
  • 1 1/2 cups whole milk, for the crepes
  • 4 tablespoons butter, for the bananas
  • 3/4 cups raw sugar, for the bananas
  • 4 bananas, a little green, so they are firm, cut in half (lengthwise)
  • 1/2 cups spiced rum, for the bananas
  • vanilla ice cream, to accompany
  • walnuts, toasted and chopped, for garnish

  • For the crepes, in a bowl and using a whisk, mix the flour, egg, butter, sugar, vanilla, and milk. Stir until you achieve a smooth and lump-free mixture.
  • Heat a non-stick skillet over medium heat and add cooking spray, form the crepes using a ladle and spread the batter with circular wrist movements. Set aside.
  • For the bananas, heat a skillet over medium-low heat; add the butter and brown sugar until melted and the sauce begins to form, carefully add the bananas, followed by the rum and immediately take a spoonful of the sauce and ignite it with a lighter or match, it will catch fire immediately, return the spoonful to the sauce to ignite the rest, stir carefully and wait for the flames to subside, this will happen when the alcohol completely evaporates, you should obtain a semi-thick texture. Remove from heat.
  • Serve the crepes, pour the bananas on top, add vanilla ice cream, and drizzle with the sauce; garnish with chopped walnuts. Enjoy with a delicious Negra Modelo® Beer.
