Baileys Flan

  • 1 cup granulated sugar, for the caramel
  • 1 1/2 cups cream cheese, in medium cubes
  • 6 eggs
  • 1 cup condensed milk
  • 1 cup evaporated milk
  • 1 cup Irish cream
  • 2 tablespoons vanilla essence
  • Irish cream, for garnish
  • chocolate shavings, for decoration
  • chocolate truffle, for garnish

  • Add the sugar to a pan over medium heat and cook until it melts and turns brown, then pour into a 20 cm diameter mold. Cool and set aside.
  • Blend the evaporated milk, eggs, cream cheese, vanilla, whiskey cream, and vanilla extract.
  • Pour the previous mixture into the mold and bake the flan in a water bath at 200 °C for 90 minutes. Cool and unmold.
  • Pour a bit more whiskey cream over the caramel and add chocolate shavings. You can serve the whiskey cream flan with truffles.
