Mix the ground pistachios with the evaporated milk, add the cream cheese and the eggs (one by one). Beat until creamy consistency is achieved.
Add the sugar, vanilla, and brandy to the previous mixture.
Place caramel at the bottom of the molds (or the mold, as applicable), ensuring it is evenly spread across the base.
Place the molds in a preheated water bath until the flan sets; if it's a large mold, it takes about 40 minutes, and if they are individual molds, they set in approximately 20 minutes. One way to check if it's set is by poking the flan with a knife; if the knife comes out clean, it means the dessert is ready.
Remove the molds (or the mold) from the water bath and let them cool at room temperature. Place them in the refrigerator, preferably overnight.
On a dessert plate, place a tablespoon of melted vanilla ice cream and unmold the flan on top. Sprinkle some crushed pistachios for better presentation.
