Coffee Flan in Microwave

  • 4 tablespoons cajeta, for the caramel
  • 1/4 cups cream cheese, at room temperature, for the flan
  • 2 eggs, for the flan
  • 1/4 cups milk, for the flan
  • 1 teaspoon vanilla essence, for the flan
  • 1/2 cups condensed milk, for the flan
  • 6 grams instant coffee, for the flan
  • 1/4 cups raspberries, for decoration

  • Place the cajeta in small microwave-safe flan molds, although it can also be in a cup, perfectly covering the bottom.
  • Add the cream cheese to a bowl and using a whisk, cream it until it becomes a paste, then add the egg, milk, vanilla essence, condensed milk, and instant coffee, then mix thoroughly. Strain the flan mixture and pour it over the cajeta.
  • Microwave the coffee flan for 1 minute and 10 seconds, checking every ten seconds. Let it cool and unmold.
  • Plate the coffee flan in the microwave and decorate with the raspberry.
