Heat the cream until it starts to smoke a little, then add the flan and next the coffee.
Let it thicken just like a normal flan.
Pour the liquid caramel into a bowl and add the flan.
How to make liquid caramel.....
For every 25 grams of sugar, add 1 tablespoon of cold water. To make the caramel more liquid and spreadable, a good trick is to add a splash of lemon juice to the water.
Use a low saucepan (or a non-stick frying pan) with the sugar and water and bring it to a slow boil. It will change from a thick syrup to a dark color.
When the caramel is dark, gently move the saucepan - without using a spatula - to spread it over the parts where the sugar has not dissolved yet.
When the caramel reaches the desired color (never black, it should be blond-golden-dark, otherwise it will be too bitter), remove it and use it immediately before it hardens.
If it hardens, a trick to recover it is to add a tablespoon of water and return the mixture to a gentle boil.
