Corn Flan with Rompope

  • 1 cup sugar, for the caramel
  • 6 eggs
  • 1 can Nestlé® LA LECHERA, 387 g
  • 1 can Nestlé® Evaporated Milk, 360 g
  • 1/2 cups rompope
  • 1 cup corn kernels, white
  • 1 tablespoon vanilla essence
  • 1 teaspoon cinnamon powder
  • ears corn, baby corn for decoration
  • leaves peppermint, for decoration

  • For the caramel, in a small pot over medium heat, cook the sugar until it caramelizes and turns amber in color.
  • Pour the caramel into a 25 cm diameter mold and set aside.
  • Blend the egg with Nestlé® La Lechera, Nestlé® Evaporated Milk, the rompope, the corn kernels, the cinnamon, and the vanilla extract.
  • Pour the previous preparation into the mold with caramel, cover with aluminum foil, place in a tray with water to cook in a water bath, and bake for 90 minutes at 180 °C. Let cool and set aside.
  • Unmold onto a flat plate and decorate with baby corn and mint.
  • Cut a slice and enjoy.
