Cornstarch Flan

It is a delicious, quick, and economical flan. These are the classic flans sold on the streets with red paper. No oven or eggs are needed. Kids will love it!

  • 1/2 liters cow's milk, or water
  • 50 grams cornstarch, cornstarch
  • 75 grams brown sugar
  • 1 stick cinnamon
  • 100 grams brown sugar, to make the caramel
  • 5 tablespoons sour cream, to make the caramel
  • 60 grams sour cream, (only if you use water, not if you use milk)
  • 1 teaspoon vanilla essence, optional
  • food coloring, yellow (a drop)

  • First, prepare the caramel by putting the sugar and water over heat until it disintegrates and acquires a brown color (not too dark) and pour it into our molds.
  • Dissolve the cornstarch in 1/4 cup of milk, stirring until it is well dissolved, and set aside.
  • Put the rest of the milk or water over medium heat along with the cinnamon (if you opted for water, also add the cream well integrated into it); when it starts to boil, lower the heat and remove the cinnamon, add the sugar and stir until it dissolves.
  • Add the reserved cornstarch, the vanilla, and a drop of food coloring, stirring constantly, being careful not to let it burn, until it thickens (approximately 2 minutes). Pour into molds with caramel, let it reach room temperature, and refrigerate preferably overnight.
