Crema Catalana (Eggless Custard)

  • 1 liter cow's milk
  • 1/4 teaspoons unflavored gelatin powder
  • 1/2 teaspoons salt
  • lime zest
  • orange zest
  • 40 grams cornstarch
  • 170 grams brown sugar
  • brown sugar, to sprinkle on top
  • 1 sprig cinnamon

  • In a saucepan, dissolve the gelatin and salt in the milk, add the citrus zest and the cinnamon stick, and bring to a boil. Stir constantly to prevent the milk from overflowing.
  • In a bowl, mix the cornstarch and brown sugar and add it to the boiling liquid; cook for one minute and remove.
  • Pour the mixture into heat-resistant individual molds. Let cool for at least 6 hours in the fridge.
