In a saucepan, dissolve the gelatin and salt in the milk, add the citrus zest and the cinnamon stick, and bring to a boil. Stir constantly to prevent the milk from overflowing.
In a bowl, mix the cornstarch and brown sugar and add it to the boiling liquid; cook for one minute and remove.
Pour the mixture into heat-resistant individual molds. Let cool for at least 6 hours in the fridge.
