Horchata Flan

  • 1 cup rice
  • 1 cup whole milk
  • 1 cup evaporated milk
  • 1 cup sugar
  • 1 cup cream cheese, in medium cubes
  • 1 cup condensed milk
  • 8 egg whites
  • 1 teaspoon cinnamon powder
  • cinnamon stick, for decoration
  • comestible flowers, for decoration

  • Place the rice, whole milk, and evaporated milk in a bowl. Let it sit for 1 hour.
  • Add the sugar to a pot and cook over medium heat for 15 minutes or until it forms a caramel, but be careful not to let it burn and do not stir it. Pour into the round mold where you will add the flan. Let it cool for 15 minutes.
  • Blend the rice with the liquid for 5 minutes, strain and reserve the liquid.
  • Pour the flan mixture into the caramel mold, cover with aluminum foil, and bake in a water bath at 180 °C for 60 minutes.
  • Remove the horchata flan from the oven and let it cool for 1 hour. Then, unmold onto a serving plate and decorate with cinnamon sticks.
