Fried Ice Cream

This fried ice cream recipe is characterized by being made at a lower temperature than usual because it comes into contact with very high temperature during frying, but this temperature shock helps the coating texture to be crispy and hot on the outside. This fried ice cream can be accompanied with fruit, syrups, honey, or powdered sugar.

  • 4 white breads, large slices, crustless
  • 4 balls vanilla ice cream, ultra-frozen, medium
  • 2 cups wheat flour, 400 g
  • 1 teaspoon REXAL® baking powder, 7 g
  • 1 tablespoon sugar, 15 g
  • 1 teaspoon salt, 7 g
  • 1 1/2 cups sparkling water, 375 ml (this is an approximate amount, it will depend on the desired consistency of the batter)
  • vegetable oil, for frying
  • icing sugar, for decoration
  • D'Gari® chocolate syrup, for decoration
  • D´Gari® strawberry flavor syrup
  • strawberries, quartered, for decoration
  • spearmint, in leaves, for decoration

  • Place the slices of bread on a flat surface and flatten them with a rolling pin; once flattened, place a frozen ice cream ball in the center of the slice and wrap it with the rolled-out bread until the entire surface of the ice cream ball is covered, freeze again for 1 hour or until the bread is very firm.
  • For the batter, in a bowl mix the wheat flour with Rexal® baking powder, sugar, and salt; gradually pour in the mineral water and continue mixing until a semi-thick consistency is obtained (as shown in the video). Set aside until use.
  • In a deep pot, heat plenty of oil over medium heat.
  • Cover the ice cream ball with the mixture and immediately fry in the oil until a golden crust forms (for about 2 minutes), repeating the process with the remaining ice cream balls. We recommend performing this action quickly once you take the ball out of the freezer.
  • On top of the fried ice cream ball, sprinkle powdered sugar and pour D’Gari® chocolate syrup and D’Gari® strawberry syrup, and decorate with strawberries and mint leaves.
