Frozen Lemon Popsicles with Pulparindo

For hot days or a party, prepare this recipe for Lemon Popsicles with Pulparindo and add a little chili powder and chamoy. For homemade lemon popsicles, you can use any popsicle mold; just make sure to unmold when they are well frozen; otherwise, they might break.

  • 8 cups water
  • 2 cups sugar
  • 2 cups lime juice
  • 1 tablespoon food coloring
  • 1 envelope unflavored gelatin powder, 7 g, hydrated and melted
  • 10 pulparindos
  • chile powder, for serving
  • chamoy, for serving

  • Heat the water in a pot over medium heat, add the sugar, and cook until a syrup is formed. Incorporate the lemon juice, food coloring, and gelatin, mix well, and cool.
  • Fill the popsicle molds with the previous mixture and freeze until it begins to solidify. Once you have a firm layer, place a Pulparindo in each popsicle. Return to freeze until completely solid.
  • Unmold the popsicles and serve with chili powder and chamoy.
