Apple and Berry Crumble with Cheese Ice Cream

For those days when you need to treat yourself, prepare this apple crumble with berries and granola that is perfect for an afternoon with friends. It is very simple and delicious, and it is accompanied by a delightful cheese ice cream.

  • 1 1/2 cups flour, (for the base)
  • 1/2 cups sugar, (for the base)
  • 1 teaspoon vanilla essence, (for the base)
  • 1/2 teaspoons salt, (for the base)
  • 3/4 sticks butter, 75 g (for the base)
  • 1 egg, (for the base)
  • 2 tablespoons butter
  • 5 apples, in cubes
  • 1/2 cups raspberries, cut in halves
  • 3/4 cups raw sugar
  • 1 teaspoon cinnamon
  • 1 stick butter, butter (90 g) for the crumble
  • 3/4 cups flour, for the crumble
  • 1/2 cups sugar, for the crumble
  • 1/2 cups Kellogg's® ancient grains granola: quinoa, amaranth, and apple, for the crumble
  • 1 cup whipping cream, for the ice cream
  • 2 packages cream cheese, (190 g each) for the ice cream
  • 1/2 cups sugar, for the ice cream
  • 1/4 cups cow's milk, for the ice cream

  • Preheat the oven to 180° C.
  • In a food processor, process the base ingredients until a homogeneous dough is obtained. Refrigerate for 15 minutes.
  • Roll out with a rolling pin and line a 20 cm pie dish that has been greased and floured. Prick with a fork and bake for 20 minutes.
  • For the filling, in a skillet over medium heat, melt the butter and add the apples and berries, cooking for 3 minutes. Add the sugar and cook over low heat for 5 minutes or until the apples are soft. Remove from heat and stir in the cinnamon. Set aside.
  • For the crumble, mix all the ingredients in a bowl without overworking it; it should be a sandy mixture. Refrigerate for 10 minutes.
  • Pour the mixture of apples and berries over the previously baked crust, trying not to add liquid to avoid sogginess. Cover with the crumble and bake for 20 more minutes until golden brown.
  • For the ice cream, whip the cream until soft peaks form. Set aside.
  • In a mixer, cream the cheese with the sugar until combined. Gradually add the milk and mix very well. Gently fold in the whipped cream and freeze for 2 hours.
  • Serve the crumble hot with cheese ice cream.
