Banana Skewers

  • 2 cups pancake mix
  • 2 eggs
  • 2 tablespoons butter, melted
  • 3 tablespoons sugar
  • 3/4 cups milk
  • 8 lady finger bananas
  • vegetable oil, for frying
  • chocolate, melted, for decorating
  • rainbow sprinkles, for decorating

  • In a bowl, mix the pancake flour with the eggs, melted butter, sugar, milk, and whisk until you have a smooth mixture.
  • On a cutting board, peel the bananas, insert a popsicle stick, and set aside.
  • In a small pot over medium heat, warm the oil and dip the bananas in the pancake batter. Remove excess batter and fry for 5 minutes or until they change color. Place on paper towels to absorb excess oil.
  • Decorate with melted chocolate and colorful sprinkles.
