Take each apple and insert a popsicle stick into the top. Line a baking sheet with parchment paper and lightly grease it with cooking oil.
In a medium saucepan over medium heat, heat the heavy cream (sweetened condensed milk), sugar, and corn syrup or maple syrup. Stir very well with a wooden spoon until all ingredients are combined and cook for ten minutes until the mixture has a caramel color. Continue stirring with the wooden spoon. Remove from heat and pour the hot mixture into a medium bowl.
Dip each apple into the caramel, ensuring all sides are well coated.
