Cherry Clafouti

Clafouti is a French dessert similar to baked custard. In this traditional recipe, it is made with cherries.

  • 1 kilo cherry
  • 3/4 cups flour
  • 3/4 cups sugar
  • 2 eggs
  • 1 cup whipping cream
  • 2 teaspoons vanilla essence

  • Preheat the oven to 400F (200 C).
  • In a baking dish (with a capacity of 2 liters), place the cleaned and stemmed cherries. Set aside.
  • In a medium bowl, mix the flour and sugar. Mix well and set aside.
  • In a small bowl, mix the eggs, cream, and vanilla extract. Whisk with a balloon whisk.
  • In the center of the flour mixture, form a well with your hands.
  • Slowly beat the egg mixture into the flour mixture. Let it rest for 15-20 minutes.
  • Pour the mixture over the fruit and cook until the cake starts to brown, about 25-30 minutes.
