Forest Fruit Vacherin

Delicious individual meringue dessert with whipped cream and forest fruits. Prepare this delicious forest fruit vacherin.

  • 4 egg whites
  • 1 1/2 cups sugar
  • 1 pinch cream of tartar
  • 1 cup whipping cream
  • 4 cups fruit of the forest, assorted
  • leaves peppermint, for garnish
  • vegetable oil, in spray

  • Preheat the oven to 100 degrees Celsius.
  • Prepare two baking sheets with wax paper and vegetable oil spray.
  • Using an electric mixer, start beating the egg whites until they begin to bubble.
  • Add the cream of tartar and gradually 1 cup of sugar. Continue beating until a white, stiff meringue is obtained.
  • Using a piping bag, make the Vacherin with circular motions on the wax paper.
  • Bake until they can be easily removed from the wax paper, approx. 1 and a half hours.
  • Whip the cream with 1/2 cup of sugar and place it in the center of each Vacherin.
  • Top with assorted forest fruits.
