4 egg whites
1 1/2 cups sugar
1 pinch cream of tartar
1 cup whipping cream
4 cups fruit of the forest, assorted
leaves peppermint, for garnish
vegetable oil, in spray

Preheat the oven to 100 degrees Celsius.
Prepare two baking sheets with wax paper and vegetable oil spray.
Using an electric mixer, start beating the egg whites until they begin to bubble.
Add the cream of tartar and gradually 1 cup of sugar. Continue beating until a white, stiff meringue is obtained.
Using a piping bag, make the Vacherin with circular motions on the wax paper.
Bake until they can be easily removed from the wax paper, approx. 1 and a half hours.
Whip the cream with 1/2 cup of sugar and place it in the center of each Vacherin.
Top with assorted forest fruits.
