Cut apple pearls with a parisien and set them aside in water or in the refrigerator.
Melt the chocolate in the microwave, being careful not to burn it. Place it for 30 seconds, stir, and put it back in until it is melted.
For the colored sugar: take 50 g of sugar and add one or two drops of food coloring of the desired color. Mix until the color is uniform. Spread on a mat and dry in the oven at 70° C, taking care not to burn it. Stop baking until the sugar separates.
Once you cover the apples with chocolate, immediately cover with the colored sugar.
