Mini Apples Covered in Chocolate and Sugar

  • Cut apple pearls with a parisien and set them aside in water or in the refrigerator.
  • Melt the chocolate in the microwave, being careful not to burn it. Place it for 30 seconds, stir, and put it back in until it is melted.
  • For the colored sugar: take 50 g of sugar and add one or two drops of food coloring of the desired color. Mix until the color is uniform. Spread on a mat and dry in the oven at 70° C, taking care not to burn it. Stop baking until the sugar separates.
  • Once you cover the apples with chocolate, immediately cover with the colored sugar.
