Morelia Gazpachos

The Morelia gazpachos are based on a simple principle: fruit and cheese always make a good pair. If you can't find Cotija cheese, which is the traditional cheese from Michoacán, you can use any firm and salty cheese (Feta, for example) to prepare this simple recipe.

  • 1 cup jicama, Dice the jícama into cubes.
  • 1 cup mango, Dice the mango into small cubes.
  • 1 cup pineapple, Dice the pineapple into cubes.
  • 1 cup watermelon , Dice the watermelon into cubes.
  • 1 cup orange juice
  • 1 lemon , can be from one to two lemons
  • salt , to taste
  • 4 teaspoons chile piquín
  • 1 cup cotija cheese
  • 1/2 onions, finely chopped

  • In a mixing bowl, combine the chopped fruits. Add the orange juice and the juice of one lemon.
  • Place the gazpacho in glasses or glass ramekins and keep it in the refrigerator until ready to serve. When you're ready, sprinkle each portion with salt to taste, chili powder, grated cheese, and onion, if desired.
