Papaya Sweet

  • 2 papayas, completely green

  • 1 1/2 tablespoons pickling lime
  • 1 cup water, for the lime

  • 1 kilo sugar, for the syrup day 2
  • 2 liters water, for the syrup day 2

  • Peel the papayas and rinse them with plenty of water to remove the sap, the milky substance that comes from the fruit's skin. Remember that this step is very important, as the skin is very bitter and can ruin the preparation.
  • Once the papaya is well rinsed, cut it in half, remove the center, and cut into large pieces. Reserve in a container with enough water to cover all the fruit to prevent oxidation.
  • Dissolve the lime in a cup of water, stir, and wait for it to settle at the bottom.
  • Pour only the lime water into the container with the papaya and water and stir well. Soak for 5 minutes, strain, and rinse the papaya well.
  • Heat plenty of water in a pot and once it boils, add the papaya and cook for 8 minutes or until slightly soft. Remove from heat, strain, and let it cool completely.
  • While the papaya cools, cook the syrup; remember that this preparation will take 3 days.Boil the sugar and water from day 1, and once it dissolves, add the cold papaya to the syrup and make sure to completely cover the fruit; if necessary, add a little more water.Cover and cook the papaya on low heat for 4 hours. Remove and let it cool in the syrup, then strain.
  • For day 2, repeat the same steps from day 1, but with the amounts corresponding to the syrup of day 2.
  • For day 3, repeat the steps from day 1, but with the amounts corresponding to the syrup of day 3. When it cools, do not strain it, so the papaya remains in the syrup for better preservation. Remember that the color should be brown.
  • Enjoy the papaya sweet and pair it with coffee or chocolate.
