3 cups peach, dried apricots cut into cubes
30 grams golden raisins
20 grams walnuts
50 grams peanuts, unsalted peeled
50 grams Brazil nuts
20 grams pistachios, unsalted peeled
30 grams raisins
50 grams pecans
1 teaspoon ground ginger
2 cups white vinegar
1 teaspoon garam masala
1 2/3 cups water
1 teaspoon salt
1 2/3 cups brown sugar

Mix the apricots, garam masala, sugar, ginger, raisins, salt, vinegar, and water in a pot. Bring the mixture to a boil.
Lower the heat to a low temperature and let it simmer for 30 to 35 minutes, stirring occasionally.
When the chutney has thickened, it will resemble a jam. At this point, remove it from the heat and let it cool.
