  • 3 cups peach, dried apricots cut into cubes
  • 30 grams golden raisins
  • 20 grams walnuts
  • 50 grams peanuts, unsalted peeled
  • 50 grams Brazil nuts
  • 20 grams pistachios, unsalted peeled
  • 30 grams raisins
  • 50 grams pecans
  • 1 teaspoon ground ginger
  • 2 cups white vinegar
  • 1 teaspoon garam masala
  • 1 2/3 cups water
  • 1 teaspoon salt
  • 1 2/3 cups brown sugar

  • Mix the apricots, garam masala, sugar, ginger, raisins, salt, vinegar, and water in a pot. Bring the mixture to a boil.
  • Lower the heat to a low temperature and let it simmer for 30 to 35 minutes, stirring occasionally.
  • When the chutney has thickened, it will resemble a jam. At this point, remove it from the heat and let it cool.
