150 grams sweet potato
150 grams pine nuts
170 grams almonds, ground
1 egg yolk
130 grams sugar
lime zest
water

Low
Boil the sweet potato in a pot of water for 20 minutes over low heat.
Remove and let cool. Peel the sweet potato and mash it in a bowl until it becomes a puree.
Add the sugar and the grated lemon peel. Mix until it forms a paste that can be shaped by hand.
To dry the dough, add the egg yolk and stir. Incorporate the ground almond and mix all the ingredients together.
Make small balls with the sweet potato dough (12-14), coat them with pine nuts, and place them on a baking sheet lined with parchment paper.
Bake at 180° C for 15 minutes. Remove and serve on a plate.
