Pine Nut Panellets

Delicious panellets also known as All Saints' sweets in Catalan cuisine.

  • 150 grams sweet potato
  • 150 grams pine nuts
  • 170 grams almonds, ground
  • 1 egg yolk
  • 130 grams sugar
  • lime zest
  • water

  • Boil the sweet potato in a pot of water for 20 minutes over low heat.
  • Remove and let cool. Peel the sweet potato and mash it in a bowl until it becomes a puree.
  • Add the sugar and the grated lemon peel. Mix until it forms a paste that can be shaped by hand.
  • To dry the dough, add the egg yolk and stir. Incorporate the ground almond and mix all the ingredients together.
  • Make small balls with the sweet potato dough (12-14), coat them with pine nuts, and place them on a baking sheet lined with parchment paper.
  • Bake at 180° C for 15 minutes. Remove and serve on a plate.
