Quince Paste

  • 1 kilo quince
  • 4 cups sugar
  • 1 cup water
  • 1/2 cups pistachios, chopped

  • Peel the quinces in a copper pot and simmer for 15 minutes or until they start to soften.
  • Add the sugar and mash, pour in the water and let it simmer slowly while stirring until it thickens.
  • It will be ready when it has a sticky consistency and you can see the bottom of the pot when stirred.
  • Pour into a mold or several molds and let cool for 24 hours.
  • Unmold and sprinkle pistachios on top.
