1 kilo quince
4 cups sugar
1 cup water
1/2 cups pistachios, chopped

Peel the quinces in a copper pot and simmer for 15 minutes or until they start to soften.
Add the sugar and mash, pour in the water and let it simmer slowly while stirring until it thickens.
It will be ready when it has a sticky consistency and you can see the bottom of the pot when stirred.
Pour into a mold or several molds and let cool for 24 hours.
Unmold and sprinkle pistachios on top.
