Valentine's Cake

It’s one of those days they say invented by El Corte Inglés, and like any other day of the same kind, it always leads us to the same question. What do I gift this year if I’ve already bought everything? Well, for lovers of sweets, I bring you an idea that you will love.

  • 400 grams strawberries
  • 400 grams clotted cream, for assembly
  • 400 grams mascarpone cheese
  • 2 Biscuit
  • 2 oranges
  • 3 sheets unflavored gelatin
  • sugar, whip cream

  • We can start by cleaning and slicing the strawberries and set them aside.
  • We prepare the gelatin sheets. We let them hydrate in a bowl with cold water for the time specified on the package, usually 10 minutes is enough. After those 10 minutes, we will use 3 or 4 tablespoons of the cream we are going to use to dissolve the gelatin sheets. The tablespoons of cream should be warm and not whipped.
  • While the gelatin sheets are hydrating, we whip the cream. (Remember that for the cream not to give us trouble when whipping, it should be very cold, and the container we use should be very clean, and if it is cold too, even better. With a bit of fat in the container, it will be almost impossible for the cream to whip well). Once whipped, we add the cheese and the tablespoons of cream with the dissolved gelatin; the gelatin should be lukewarm, and we mix well with gentle folding movements from bottom to top, being careful not to deflate the cream. This mixture can be divided into 2 parts to use only as filling for the cake, or we can divide it into 3 parts, 2 large for the filling and another smaller one to spread on the sides of the cake as I did. That is up to the consumer's preference.
  • Finally, before we start assembling the cake, we will prepare juice with the 2 oranges to moisten the sponge cakes with the help of a spoon.
  • We start assembling the cake. We place one of the sponge cake layers as the base, moisten it with the orange juice, pour one part of the cream-cheese-gelatin mixture evenly over the base, and cover with strawberries.
  • We repeat the previous steps. On top of the strawberries, we place the other sponge cake layer, moisten it with the juice, cover it with the other part of the cream-cheese-gelatin mixture, and finish with the final layer of strawberries. If we want to cover the sides of the cake, now is the time.
  • To finish, we need the decoration. I used chocolate-covered peanuts, but you can use whatever you like: candies, marshmallows, chocolates, gummies... or you can simply leave it as is. As I said, that is up to your taste. We leave it in the fridge overnight to set well and it's ready to enjoy.
