Whole Grain Pear Pudding with Mixed Berries

  • 10 slices wholemeal bread, from a box (whichever you prefer)
  • 2 eggs
  • 1 1/2 cups lactose-free milk, light
  • 4 tablespoons sugar
  • 1 1/4 teaspoons baking powder
  • 1 envelope vanilla sugar, or 1 tablespoon of vanilla
  • 1 teaspoon orange blossom essence
  • 1/2 cups mixed blackberry, dried
  • 1 pear, washed, peeled, and cut into cubes

  • Preheat the oven to 250°C.
  • In a bowl, we place the crumbled bread and soak it with the milk.
  • We add all the ingredients one by one, using a fork to incorporate everything until we have a uniform mixture.
  • Grease a loaf pan and pour the mixture into it.
  • Bake for 35 to 45 minutes or until the pudding is cooked in the center; we will know this if the tip of a knife comes out clean when inserted, our pudding is ready.
