Remove the crescent rolls from the package, but do not separate them. Roll out and flatten and place one next to the other on a round cookie sheet, cutting at the edge of the pan and filling in the empty spaces.
Mix the cornstarch with the cold water and add the mixture to the remaining cup of apple juice (3/4) in a small saucepan. Heat over medium-low until thickened. Sprinkle over the top of the pizza, making sure to cover the fruit. Let sit for 15 minutes before serving.
