Gaby's Doodle Cookies

These buttery doodle cookies have chocolate in the middle and are decorated with chocolate doodles.

  • 2 egg yolks
  • 125 grams icing sugar
  • 250 grams butter
  • 375 grams flour
  • 1 vanilla chocolate, Turin

  • Put the ingredients, except for the chocolate, in the processor to make the cookie dough. Let the dough cool for 30 minutes.
  • Divide the cookie dough in half. Roll out the dough until thin and cut out circles.
  • Bake on a cookie sheet for 10 minutes at 200 degrees until the edges are lightly browned.
  • Melt the chocolate and put some between two cookies to make a sandwich. Place them on a tray and use a fork or piping bag to make lines (or doodles) with the remaining chocolate.
