These delicious butter cookies are traditional during the Christmas season in Germany. They have a rich texture that melts in your mouth when bitten. They are perfect for decorating with a bit of chocolate or for enjoying on their own. Make them and share with everyone or make them as gifts; they will be a hit with all.
Line 2 or 3 baking sheets with parchment paper. Place the butter in a bowl and beat until softened. Mix it with the sugar, vanilla, and salt until the sugar is absorbed. Gradually add 2/3 of the flour, mixing continuously.
Add the rest of the flour and the almond and mix until a dough forms. Transfer the dough to a piping bag and shape vertical pieces of 7.5 cm long on the baking sheets or give any shape to your cookie (heart, circle, etc.).
Bake for 12 minutes or until golden brown and transfer to a wire rack. Melt the chocolate in a bowl over a double boiler. Dip the cookie halfway and place them on the rack to dry.
