These delicious butter cookies are traditional during the Christmas season in Germany. They have a rich texture that melts in your mouth when bitten. Preheat the oven to 350°F (180°C). Line 2 or 3 baking sheets with parchment paper. Place the butter in a bowl and beat until softened. Mix it with the sugar, vanilla, and salt until the sugar is absorbed. Gradually add 2/3 of the flour, mixing continuously. Add the rest of the flour and the almond and mix until a dough forms. Transfer the dough to a piping bag and shape vertical pieces of 7.5 cm long on the baking sheets or give any shape to your cookie (heart, circle, etc.). Bake for 12 minutes or until golden brown and transfer to a wire rack. Melt the chocolate in a bowl over a double boiler. Dip the cookie halfway and place them on the rack to dry.
