Ghost Meringues

  • 150 grams bittersweet chocolate
  • 3 egg whites
  • 3/4 cups sugar
  • 1 pinch salt

  • Preheat the oven to 100ºC.
  • Beat the egg whites with an electric mixer for 5 minutes and add a pinch of salt.
  • Gradually add the sugar, one tablespoon at a time, until it is fully incorporated.
  • Have two baking trays ready with parchment paper.
  • Fill the piping bag with the help of a spoon and make the meringues in the shape of rolls.
  • Put the trays in the oven and wait one and a half to two hours until the meringues are dry.
  • Take the trays out of the oven and while the meringues cool, melt the dark chocolate in a double boiler.
  • With the help of a toothpick, draw the eyes and mouths on the meringues to shape them like ghosts.
  • Wait until the chocolate hardens and you’re done!
