Ginger and Lemon Cookies

These Ginger and Lemon Cookies are glazed and perfect for the Christmas season.

  • 1 stick unsalted butter
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon lime peels
  • 1 1/2 cups flour
  • 1/2 tablespoons ginger powder
  • 1/2 tablespoons baking powder, royal
  • 1 pinch salt
  • 3 tablespoons crystallized ginger

  • Preheat the oven to 180 degrees Celsius.
  • Prepare two baking sheets with parchment paper.
  • In an electric mixer, beat the butter and sugar quickly until fluffy (5 minutes).
  • Add the eggs and mix quickly to combine, add the lemon zest and mix.
  • In a large bowl, mix the flour, ginger, baking powder (Royal), salt, and ginger. Add to the butter mixture.
  • Mix the dough for approximately 1 minute slowly.
  • Using a spoon, make round cookies and place them on the baking sheet (try to leave 5 cm between each cookie). Bake the cookies for 7 minutes and allow them to cool.
