In an electric mixer, beat the butter and sugar quickly until fluffy (5 minutes).
Add the eggs and mix quickly to combine, add the lemon zest and mix.
In a large bowl, mix the flour, ginger, baking powder (Royal), salt, and ginger. Add to the butter mixture.
Mix the dough for approximately 1 minute slowly.
Using a spoon, make round cookies and place them on the baking sheet (try to leave 5 cm between each cookie). Bake the cookies for 7 minutes and allow them to cool.
