Ingredients

36 portions
  • 1 stick unsalted butter
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon lemon peel
  • 1 1/2 cups flour
  • 1/2 tablespoons ground ginger
  • 1/2 tablespoons baking soda, royal
  • 1 pinch salt
  • 3 tablespoons crystallized ginger

Preparation

Preheat the oven to 180 degrees centigrade.
Prepare two baking sheets with waxed paper.
In an electric mixer beat butter and sugar quickly until fluffy (5 minutes).
Add the eggs and mix quickly to combine, add the lemon peel and mix.
In a deep bowl, mix flour, ginger, baking powder (Royal), salt and ginger. Add to the butter mixture.
Mix the dough for about 1 minute slowly.
Using a spoon make circular cookies and put them on the baking tray (try to leave 5 cm between each cookie) Bake the cookies for 7 minutes and allow them to cool.
