Preheat the oven to 180 degrees Celsius. Prepare two baking sheets with parchment paper. In an electric mixer, beat the butter and sugar quickly until fluffy (5 minutes). Add the eggs and mix quickly to combine, add the lemon zest and mix. In a large bowl, mix the flour, ginger, baking powder (Royal), salt, and ginger. Add to the butter mixture. Mix the dough for approximately 1 minute slowly. Using a spoon, make round cookies and place them on the baking sheet (try to leave 5 cm between each cookie). Bake the cookies for 7 minutes and allow them to cool.
