Gingerbread Cake with Cream Cheese Frosting

  • 3 tablespoons fresh ginger
  • 3/4 cups granulated sugar
  • 1 cup wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoons ginger powder
  • 1/4 teaspoons salt
  • 1/4 cups cow's milk
  • 1 teaspoon vanilla essence
  • 90 grams butter, at room temperature
  • 2 limes, only the zest
  • 2 eggs
  • 190 grams Philadelphia® cream cheese, for the frosting
  • 2 tablespoons icing sugar, for the frosting
  • 45 grams butter, at room temperature
  • 1 teaspoon vanilla essence, for the frosting
  • leaves peppermint, for decorating

  • Preheat the oven to 180°C
  • In a bowl, mix the dry ingredients: flour, salt, baking powder.
  • In a mixer, add the butter, sugar, and gradually add the eggs, then incorporate the dry ingredients mixture and slowly add the milk. Add the fresh ginger, ground ginger, and lemon zest, and beat until completely combined.
  • Pour the mixture into a greased and floured loaf pan and bake for 25 minutes. Let it cool and set aside.
  • For the cream cheese frosting, in a bowl, cream the cream cheese and butter, then add the powdered sugar and vanilla extract. Refrigerate for 30 minutes and set aside.
  • Using a spatula, spread the cream cheese frosting on the cake until completely covered.
  • Garnish with mint leaves and ground ginger.
