  • 4 cups flour, for the cookie dough
  • 2 teaspoons ground ginger, for the cookie dough
  • 2 teaspoons cinnamon powder, for the cookie dough
  • 1 cup raw sugar, for the cookie dough
  • 1 cup butter, for the cookie dough
  • 1/2 cups honey, for the cookie dough
  • 1 cup icing sugar, for the frosting
  • 1/2 tablespoons meringue powder, for the frosting
  • 1 tablespoon lime juice, for the frosting
  • 1 tablespoon water, for the frosting

  • Preheat the oven to 180° C.
  • For the cookie dough, mix the flour with the ginger, cinnamon, and sugar.
  • Incorporate the honey and butter into the previous mixture and knead until you obtain a homogeneous dough.
  • Roll out the dough with a rolling pin to a thickness of 4 or 5 mm. Cut out with a star-shaped cookie cutter.
  • Bake the cookies for 6 to 8 minutes for small pieces and 11 to 15 minutes for larger pieces, or until the edges are slightly golden.
  • For the frosting, beat the sugar with the meringue powder and mix in the lemon juice and water. Beat until you achieve stiff peaks and a very white color.
  • Place the mixture in a piping bag with a star tip and set aside.
  • Assemble the tree by sticking the stars from largest to smallest with a bit of frosting. Decorate with candies and let dry for 2 hours.
