Glazed Carrot, Walnut, and Orange Muffins

  • Preheat the oven to 200°C.
  • Grate and peel the 3 carrots with a coarse grater.
  • Grate the orange peel with a fine grater. Squeeze the juice and set it aside.
  • Chop the walnuts finely.
  • Beat the egg with the sugar and then add olive oil, baking powder, walnuts, and flour while continuing to beat.
  • Pour the juice of one orange, the carrots, and the grated peel. Pour the mixture into muffin molds and bake for 20 minutes or until a toothpick comes out clean.
  • For the glaze, place 100 g of powdered sugar and lemon juice in a bowl and mix until thick.
  • Sprinkle cinnamon over the muffins and spread the glaze on them.
