Glazed Donuts

  • 2 tablespoons yeast
  • 160 milliliters milk, warm
  • 2 tablespoons sugar
  • 2 eggs
  • 480 grams flour
  • 85 grams unsalted butter
  • 4 grams salt
  • 50 grams icing sugar
  • 1 liter vegetable oil
  • 1 cup sugar flower
  • 1/2 cups milk
  • 1 tablespoon lime zest

  • Mix the yeast, warm milk, and one tablespoon of sugar. Let it rest for 15-20 minutes.
  • Add the flour, salt, 5 tablespoons of sugar, and the fermented yeast into a bowl, mix, and incorporate the eggs and butter in three parts, meaning you add, mix, and repeat until you finish.
  • Cover the dough with a cloth or plastic wrap. Let it rest for 1 hour and 30 minutes.
  • Roll out the dough and shape it into donuts, then place them on a tray and cover them, letting them rest for another 40 minutes.
  • Fry your donuts for 20 seconds on each side. Finally, when they cool down, add the glaze.
  • For the glaze: put the sugar in a bowl and gradually add tablespoons of milk until you obtain a slightly liquid mixture, then add the lemon zest.
