Glazed Lemon Cookies

Cookies can be enjoyed at any time, alone, with a cup of coffee or tea, and these cookies will be a sensation, as they are very easy to prepare and with their lemon glaze, you surely won't be able to resist.

  • 2 sticks butter, at room temperature
  • 3/4 cups sugar
  • 1 egg yolk
  • 1 teaspoon vanilla essence
  • 1 3/4 cups flour
  • 1/4 teaspoons salt
  • 1/4 teaspoons baking powder
  • 1 cup icing sugar, for the glaze
  • 2 tablespoons lime juice, for the glaze
  • 2 tablespoons lemon zest

  • Preheat the oven to 180°C.
  • In a mixer, add the butter and sugar, beat until combined. Add the egg yolk, vanilla extract, and lemon zest.
  • Incorporate the flour, salt, baking powder, and beat until you obtain a homogeneous dough. Refrigerate for 30 min.
  • On a floured surface, roll out the dough and cut with a cookie cutter.
  • Bake for 15 min. Let cool and set aside.
  • For the glaze, mix the powdered sugar with the lemon juice.
  • Spread the glaze over the cookies and decorate with lemon zest, let dry for 20 min and enjoy.
