Delicious sugar cookies with a powdered sugar icing. Perfect for any occasion as you can prepare and decorate them according to the event. This is a very versatile recipe that will make everyone enjoy a delightful treat that also looks amazing.
In a deep bowl, whisk together the flour, salt, and baking powder.
In an electric mixer with the paddle attachment (not the whisk), mix the room temperature butter with the sugar. Add the egg, brandy, and vanilla, and continue to combine. Gradually add the flour and finish mixing.
Place the dough on a clean floured surface and form two balls of dough. Cover the balls with plastic wrap and refrigerate for at least 1 hour or up to 3 days.
Preheat the oven to 180 degrees Celsius.
Prepare two baking sheets lined with parchment paper.
Flour a clean surface and roll out a ball of dough until it is 1/4 cm thick. It’s important to keep using the rolling pin sideways and to keep moving the dough to prevent sticking.
Using cookie cutters, cut out the cookies and place them on the baking sheets. Bake for 10 minutes or until they are slightly golden. Remove from the oven and allow to cool.
While the cookies are cooling, make the icing by beating the powdered sugar, egg white, and water with an electric mixer using the paddle attachment.
Divide the icing into two and add a little more water to one half. This half of the icing is used to cover the base of the cookies. The other thicker half of the icing is used for the edges or for details.
Using food coloring, tint the icings (remember to use very little coloring to achieve a good pastel color).
Decorate the cookies with the icings. Use the thick icing for the edges and fill in with the thinner icing.
