Gorditas de Nata with Abuelita Chocolate

  • 3 Mexican chocolate tablets
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 2 eggs
  • 1 1/2 cups clotted cream

  • Pour the flour into a deep bowl and grate the chocolate tablets on top using a cheese grater. Add the baking powder, sugar, salt, eggs one by one, the cream, and mix until well combined.
  • Place the dough in a bowl, cover with cling film, and let it rest for 20 minutes in the refrigerator.
  • Once the dough has rested for the appropriate amount of time, place it on a floured surface, knead until it forms a uniform ball, roll it out with a rolling pin to a thickness of half a centimeter, and using a 5-centimeter diameter cutter, cut out the gorditas; remember to flour the cutter to prevent the dough from sticking.
  • In a skillet over low heat, cook the gorditas for 5 minutes on each side. Serve and accompany with hot coffee or milk.
