Grape Tuscany Schiacciata

Tuscany schiacciata is a sweet focaccia with red grapes that is prepared during the grape harvest season.

  • Dissolve the yeast in 50 ml of warm water and wait 5 minutes.
  • In a container, sift the flour, then add the salt and sugar, mixing well. Add the yeast, 1 ½ tablespoons of oil, the remaining water, and mix well until a smooth and elastic dough is formed.
  • Add the total amount of water and knead for 10 minutes. Cover with the remaining olive oil and cover with a cloth, letting it rest for 20 to 25 minutes.
  • Preheat the oven to 400° F or 200° C
  • Put a little olive oil on the baking tray with a brush and spread the dough with your fingers to form an even rectangle.
  • Place the grapes pressing them down, brush with olive oil, sprinkle with sugar, and add sprigs of rosemary.
  • Bake for 20 minutes or until lightly golden.
  • Whip the cream until stiff, add the sugar, and mix until you obtain whipped cream. Ready to serve.
