Mix the butter, sugar, and lemon zest in a bowl. Beat the ingredients using a handheld mixer on medium speed for 5 minutes, until you obtain a fluffy mixture.
Lower the speed and add the eggs one by one, mixing until everything is well integrated, about 3 minutes.
Add the lemon juice, vanilla extract, salt, baking powder, and baking soda, the latter two sifted beforehand. Mix and gradually incorporate the flour. Pour in the Oikos® Natural Greek Yogurt and mix with a plastic spatula until you achieve a uniform consistency.
Pour the mixture into a previously greased cake pan with butter. Fill 2/3 of the pan and bake at 180 °C for 45 minutes.
Unmold and let cool on a rack for 20 minutes. Decorate with Oikos® Natural Greek Yogurt and slices of yellow lemon.
