Greek Yogurt Cake

Enjoy this delicious fluffy yogurt cake full of flavor, with a hint of lemon and the creamy Oikos® Natural Greek Yogurt.

  • 1 cup butter, in cubes and at room temperature
  • 1 1/4 cups sugar
  • lime zest
  • 4 eggs
  • 1/3 cups lime juice
  • 1 teaspoon vanilla essence
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 cups flour, sifted
  • 1 1/2 cups Oikos® plain Greek yogurt
  • Oikos® plain Greek yogurt, for decoration
  • lemon, sliced, for decoration

  • Mix the butter, sugar, and lemon zest in a bowl. Beat the ingredients using a hand mixer at medium speed for 5 minutes until you get a fluffy mixture.
  • Lower the speed and add the eggs one by one, mixing until everything is well combined, for about 3 minutes.
  • Add the lemon juice, vanilla extract, salt, baking powder, and baking soda, the last two sifted beforehand. Mix and gradually incorporate the flour. Pour in the Oikos® Natural Greek Yogurt and mix with a plastic spatula until you achieve a uniform consistency.
  • Pour the mixture into a previously greased mold with butter. Fill 2/3 of the mold and bake at 180 °C for 45 minutes.
  • Unmold and let cool on a rack for 20 minutes. Decorate with Oikos® Natural Greek Yogurt and slices of yellow lemon.
