Guava and Cheese Empanadas

Do you like the fruit paste with cheese? Prepare these Guava and Cheese Empanadas, a different version of this Mexican dessert but equally delicious. For this recipe you can buy your favorite cheese, manchego añejo cheese, cured manchego cheese, or any other favorite. These Guava and Cheese Empanadas are sweetened with piloncillo or unrefined whole cane sugar, an ingredient that gives a different and delicious flavor. For this recipe you shouldn't worry where to buy puff pastry, you can use the homemade recipe to do it.

  • 500 grams guava
  • 2 piloncillos
  • 1/4 cups water
  • 1 stick cinnamon
  • sugar, to extend
  • flour, to extend
  • puff pastry
  • 1/2 cups cream cheese, in cubes
  • egg, to varnish

  • Preheat the oven to 200°C. (392 °F)
  • To prepare the guava candy filling, cook the guavas for 10 minutes in boiling water until they are slightly soft, drain and reserve.
  • Remove the seed of the guavas with a spoon.
  • Put the piloncillo in a small pot with ¼ cup of water and cinnamon, cook for 10 minutes until you get a honey texture, add the guavas and cook until it has a thick consistency and fall apart slightly. Let cool and set aside.
  • On a clean surface sprinkle sugar, extend the puff pastry to 3 mm thick with a rolling pin and if necessary add a little flour. Cut in circles with a 10 cm diameter cutter.
  • Fill the puff pastry discs with the guava candy and add the cream cheese squares, close with a fork, varnish with egg.
  • Bake for 20 minutes. Let cool and accompany with a glass of milk.
