Hazelnut Christmas Tree Cookies

Delicious hazelnut cookies shaped like Christmas trees, they are spectacular for gifting during Christmas.

  • 3 cups flour, Economax
  • 1/4 teaspoons salt
  • 1/4 teaspoons baking powder
  • 1 cup hazelnuts, toasted, peeled, and ground
  • 2/3 cups sugar, hill country fare
  • 1 1/4 cups butter
  • 1 egg, large
  • 1 egg yolk, Hill Country Fare
  • 1 teaspoon vanilla essence, H-E-B
  • icing sugar
  • raspberries jam, Hill Country Fare

  • Preheat the oven to 190 degrees
  • Sift the flour, salt, and baking powder.
  • Place the butter and sugar in a mixer and cream together.
  • Add the toasted and ground hazelnuts, egg yolk, vanilla, and flour to the mixer. Form a ball, and let cool in four balls for 1 hour.
  • Roll out one of the balls of dough on a flat, floured surface. Cut out cookies using a tree-shaped cutter and place them on an ungreased baking sheet.
  • For half of the cookies, cut a circle with a small round cookie cutter about 1 cm (or the back of a round piping tip).
  • Repeat the previous step with the remaining refrigerated dough.
  • Bake the cookies for 10 minutes and remove them.
  • Sprinkle powdered sugar over the cookies with holes.
  • Spread jam on the complete tree cookies and place the cookies with powdered sugar on top.
