Healthy Sweet Crepes

Incredible sweet cocoa crepes with creamy chocolate filling with mascarpone cheese and fresh berries, topped with delicious toasted almonds and creamy Reddi Wip® whipped cream, will be the ideal option for a healthier dessert that you will always want to make.

  • 3 eggs, for the crepe batter
  • 3/4 cups water, for the crepe batter
  • 1/2 cups whipping cream, for the crepe batter
  • 11/4 cups wheat flour, whole wheat for the crepe batter
  • 1/3 cups cocoa, for the crepe batter
  • 2 tablespoons sugar, for the crepe batter
  • 1 pinch salt, for the crepe batter
  • 1/2 sticks unsalted butter, (90 g) melted
  • 1 cup bittersweet chocolate, are sugar, for the filling
  • 1/2 cups ricotta cheese, for the filling
  • 1/2 cups Reddi Wip® orignal, for filling and decoration
  • 1 cup strawberries, cut into quarters, for filling and decoration
  • 1 cup raspberries, for filling and decoration
  • 1/4 cups almonds, toasted sliced, for decoration

  • In a bowl, mix the eggs, water, cream, flour, cocoa, sugar, salt, and butter thoroughly.
  • Heat the pan over medium heat with a bit of butter and pour a little of the mixture to form a crepe, flip when it detaches and remove. Set aside the crepes.
  • In a glass bowl, melt the chocolate and cool until it reaches room temperature, then add ricotta cheese and mix with Reddi Wip Traditional® until you achieve a thick and smooth mixture. Set aside.
  • Fill the crepes with the chocolate and berry mixture. Add sliced almonds and decorate with Reddi Wip Traditional®.
