Homemade Lime Nieve

Featuring a refreshing lime nieve topped with chamoy and chile powder, this homemade lime nieve will become your family’s favorite sorbet! There’s nothing better than the combination of water, sugar, green food coloring, and unflavored gelatin for those hot days when a delish lime nieve is all you need!

  • 4 cups water
  • 2 cups sugar
  • 2 cups lime juice
  • 1 tablespoon green food coloring
  • 1 envelope unflavored gelatin powder, hydrated and melted, 0.2 oz 
  • ice cubes
  • coarse salt
  • chile powder, for garnish 
  • chamoy, for garnish

  • In a small pot, heat water over medium heat. Add sugar and cook until a syrup is formed. Remove from heat and let cool slightly.
  • Transfer syrup to a bowl, add lime juice, green food coloring, and unflavored gelatin. Mix until completely incorporated.
  • Place previous bowl inside a larger bowl with ice and coarse salt. Shake smaller bowl for a while until frost starts forming around the edges. Using a silicone spatula, lower frost and keep shaking until it starts to freeze. Repeat until completely frozen.
  • Serve homemade lime nieve garnished with chile powder and chamoy.
