Homemade Muéganos

  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 tablespoon lard
  • 1/2 cups cow's milk
  • 1 cup vegetable oil
  • 1 cup piloncillo, grated, for the syrup
  • 1/2 cups water, for the syrup

  • For the dough, mix the flour with the baking powder and the lard. Gradually add the milk until you obtain a dough.
  • Knead the dough until smooth and elastic.
  • Roll out the dough with a rolling pin to ½ cm thick and cut into squares with a knife. Set aside.
  • In a small pot, heat the oil and fry the dough squares in small batches to avoid overflowing, until golden brown. Drain on paper towels and set aside.
  • For the syrup, cook the piloncillo with water until you obtain a thick syrup, about 10 minutes.
  • Coat the muéganos with the syrup and shape them using two spoons, let them dry for at least 30 minutes. Serve.
