To prepare the cake, start by greasing two round baking pans of approximately 20 cm and place a layer of parchment paper at the bottom. Spray the pans with cooking spray and dust with a tablespoon of flour.
In an electric mixer, beat the sugar, butter, and vanilla for 5 minutes. Add the eggs and continue mixing.
In a deep bowl, mix the flour, baking powder, and salt. Pour this mixture into the butter mixture and beat for 3-4 minutes. Add the milk to the mixture and beat for another 2-3 minutes.
Pour the mixture into the two pans and bake for 18-20 minutes or until a toothpick inserted comes out clean. Remove from the oven and let the cakes cool for 10 minutes before unmolding.
Unmold and let the cakes cool for an additional 15 minutes.
Place 1 cake on a cake stand and, using a knife, spread a layer of blackberry jam on top, then cover with the other cake.
