Jam Cake

A delicious traditional butter and spice cake with a layer of blackberry jam.

  • 1 tablespoon flour, for the baking dish
  • 1 cup sugar
  • 1/2 cups unsalted butter, at room temperature
  • 1 tablespoon vanilla essence
  • 3 eggs
  • 2 1/4 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1/2 teaspoons cinnamon powder
  • 1/2 teaspoons nutmeg
  • 1 1/4 cups cow's milk
  • 1 cup blackberry jam
  • 2 tablespoons icing sugar

  • Preheat the oven to 180 degrees Celsius.
  • To prepare the cake, start by greasing two round baking pans of approximately 20 cm and place a layer of parchment paper at the bottom. Spray the pans with cooking spray and dust with a tablespoon of flour.
  • In an electric mixer, beat the sugar, butter, and vanilla for 5 minutes. Add the eggs and continue mixing.
  • In a deep bowl, mix the flour, baking powder, and salt. Pour this mixture into the butter mixture and beat for 3-4 minutes. Add the milk to the mixture and beat for another 2-3 minutes.
  • Pour the mixture into the two pans and bake for 18-20 minutes or until a toothpick inserted comes out clean. Remove from the oven and let the cakes cool for 10 minutes before unmolding.
  • Unmold and let the cakes cool for an additional 15 minutes.
  • Place 1 cake on a cake stand and, using a knife, spread a layer of blackberry jam on top, then cover with the other cake.
