Preheat the oven to 400 F. In a large bowl, place eggs, egg yolks, and sugar.
Place the bowl over simmering water in a double boiler, without touching the water, and beat with a hand mixer until the egg temperature reaches 110 F.
Remove from heat and continue beating until it doubles in volume, then gradually add the flour.
Place the batter on a baking sheet with a non-stick base, previously greased and floured.
Bake for 10 to 15 minutes until lightly golden. Remove from the oven and let cool.
Once cooled, dust with powdered sugar and flip onto parchment paper. Spread the jam on top and roll it up using the paper.
You can cut the edges for a nicer presentation. Dust with powdered sugar.
