Jam Roll

  • 8 eggs
  • 2 egg yolks
  • 180 grams sugar
  • 180 grams flour
  • icing sugar

  • Preheat the oven to 400 F. In a large bowl, place eggs, egg yolks, and sugar.
  • Place the bowl over simmering water in a double boiler, without touching the water, and beat with a hand mixer until the egg temperature reaches 110 F.
  • Remove from heat and continue beating until it doubles in volume, then gradually add the flour.
  • Place the batter on a baking sheet with a non-stick base, previously greased and floured.
  • Bake for 10 to 15 minutes until lightly golden. Remove from the oven and let cool.
  • Once cooled, dust with powdered sugar and flip onto parchment paper. Spread the jam on top and roll it up using the paper.
  • You can cut the edges for a nicer presentation. Dust with powdered sugar.
